We now collect the birthdates of our members and would like to be able to someday send offers or discounts on their birthdays. Is there any way that Agile could add a 'Birthdate' field to member records?
Ideally, this would be a field that would trigger an email message.

Yes, this would be a wonderful tool for customer appreciation.
In addition to having a field for member birthdays, it would be very useful to have fields or flags for entertainment preferences. For example, at our theatre, knowing whether a customer prefers film, concerts, comedy or special events is useful. So is knowing their genre preferences and favorite program series.
If we could report and query these preferences in Customer Relations, it would make them useful.
These entertainment preferences could be selected by our staff, but they could also be managed by the patron in their Agile customer or member log-in.
